Description
The ELIA cuvée is made from the Colombard grape, which has the particularity of ripening to between 9° and a maximum of 11° alcohol. By harvesting about a week earlier than conventional IGP Côtes de Gascogne grapes and stopping fermentation before all the sugars are converted, the alcohol content is kept at 9°. This is an entirely natural process — with no technical dealcoholisation involved.
