Saint Benevolence employs multiple varieties of mango (including Madame Francis, a traditional Haitian variety) to produce this vibrant portrait of the tropical stone fruit in all its dimensions, evoking fresh and dry fruit, juice and flesh, green skin and ripe, sweet pulp—all in one dynamic sip. Though Haitian-grown mangos cannot currently be imported into the US, this expression lovingly pays homage to the island’s traditional crop—and the local rum infusions made with it—while adding further depth with aged clairin.
