During my college years, I became a craft beer specialist. I still have very strong ties to beer even while working as a wine specialist now. That said, I have discovered a bottle where those two worlds have truly collided! Split Rail Winery “All the Beautiful Horses” is a combination of a Pet-Nat and a sour golden ale. This Roussanne sparkling wine was made using the ancestral method. After disgorgement, it was topped with 20% sour golden ale aged with brettanomyces in oak barrels. And, of all places, it comes from Idaho. Everything about this is wild! Since this is the Year of the Fire Horse, this fits the theme perfectly.White stone fruits, golden apple tartness, and the grooviest type of funk. This will pair really well with high-fat foods like smoked meats, triple-cream cheeses, raw seafood, and avocado toast.
