One of my go-to sparkling wines is Varichon & Clerc Privilage Blanc de Blancs Brut. Located in the alpine region of Seysell, on the Rhone River, its cool microclimate produces fresh and vibrant white wines. Although the blend changes year to year for consistency, it consists of Ugni Blanc, Colombard, Chenin Blanc, Chardonnay, and the coveted Jacquere.
The expressive, floral nose is the perfect introduction to the bright fresh fruit palate. Lively minerality and numerous fine bubbles dance on your tongue tantalizing you to take another sip. Pair with fish or white meat, or try it with a “stinky” cheese. These bubbles are good enough to drink on its own, but at $17, cheap enough to mix in your favorite sparkling cocktail. Mimosa’s anyone?
